Mother's Day
Cake
Always ask an adult to help
you with this recipe!
INGREDIENTS:
- 1 pkg white cake mix
- 1 sm pkg instant pistachio pudding
- 1 c lemon lime soda

- 1 c vegetable oil
- 3 eggs
- 1 c chopped pecans

INSTRUCTIONS:
- Mix all ingredients (except pecans) for 2 minutes in
mixer on low speed.
- Beat on medium speed for 2 minutes.
- Stir in pecans.
- Pour into 13" x 9" pan.
- Bake at 350 degree oven for 40-50 minutes.
- Prepare frosting while cake is cooking or day
before.
FROSTING
- 1 - 1 1/2 c cold milk
- 1 sm pkg pistachio pudding
- 1 (8 oz) Cool Whip
- 1/2 c pistachios (toasted and chopped)
- Beat milk and pudding on low speed for 2 minutes.
- Fold in Cool Whip.
- Spread over cake.
- Sprinkle with pistachios.
- Refrigerate until ready to serve.
