Mother's Day Cake

 


Always ask an adult to help you with this recipe!


INGREDIENTS:

  • 1 pkg white cake mix
  • 1 sm pkg instant pistachio pudding
  • 1 c lemon lime soda
  • 1 c vegetable oil
  • 3 eggs
  • 1 c chopped pecans

INSTRUCTIONS:

  1. Mix all ingredients (except pecans) for 2 minutes in mixer on low speed.
  2. Beat on medium speed for 2 minutes.
  3. Stir in pecans.
  4. Pour into 13" x 9" pan.
  5. Bake at 350 degree oven for 40-50 minutes.
  6. Prepare frosting while cake is cooking or day before.

    FROSTING

  • 1 - 1 1/2 c cold milk
  • 1 sm pkg pistachio pudding
  • 1 (8 oz) Cool Whip
  • 1/2 c pistachios (toasted and chopped)
  1. Beat milk and pudding on low speed for 2 minutes.
  2. Fold in Cool Whip.
  3. Spread over cake.
  4. Sprinkle with pistachios.
  5. Refrigerate until ready to serve.
